I was going to suggest this also, but such a big endeavor and more expensive than the primer. If you do rip it out, use a moisture resistant wallboard. I’ve done both and like the “new” approach myself. Either way-excited to see the final product.
We can’t decide yet. We need to create a loft hatch either in here or next door so we might end up taking the whole ceiling down at which point the walls may as well go too 😬

You’re going to have to use some kind of heavy duty primer to seal up that old oil-based paint.
Hmm, or maybe take the whole lot off and re plaster?!
